How should coffee be stored, once opened?

The worst enemies of coffee beans are air and moisture. When beans are exposed to these elements, the flavorful oils vanish and the staling process begins. One way to postpone the deterioration is to store the coffee in an airtight environment. Open bags should be sealed as tightly as possible and store in the freezer.

No. Distilled water will make coffee taste flat.

What is the best way to brew coffee?
First, make sure the coffee is fresh. Coffee losses much of its flavor and freshness in as little as 2 weeks. Buy in small packages and use quickly. Next, start with a clean brewer, making sure that there are no stale oils left from previous pots. Then use cold water, never distilled or previously heated water. Make sure that the coffee brewer gets the water hot enough. It takes water temperature of at least 195 degrees (F) (90.6 degrees(C) to extract coffee properly. Use the proper amount of coffee: one rounded tablespoon per each 6 ounce cup (add an additional tablespoon if you desire a stronger brew). Finally, do not let the coffee sit on an open burner for more than twenty minutes and never reheat it.

What is Vacuum Packing?

Vacuum packaging eliminates the natural protective gas barrier that surrounds coffee after roasting. The result is that when the vacuum is broken, the coffee tends to become stale very quickly. Coffe that is vacuum packed should be used as quickly as possible after opening.
